Topic: Pasteurization versus sterilization of substrates

Biography:

Bruno Henry and his wife Evelyne, both engineers in microbiology, created in 1993 the company Lentin De La Buche, specializing in the production of pasteurized substrate for the culture of Shiitake.  Over the years they diversified with substrates for the cultivation of Oyster Mushrooms and Pholiote.

The company is equipped with air-conditioned rooms to ensure the vegetative development of the mycelium and they sell only incubated substrates.

To meet increasing demand  two new units were created in 2003 and 2015. Today, Lentin De La Buche employs 21 people on site and produces 11 500 tons of substrates annually.
